Grilled Bruschetta Chicken

This is a healthier spin on chicken parmesan—made with similar ingredients but with fewer calories. Don’t worry, it doesn’t lack flavor, thanks to the fresh basil and balsamic vinegar.

 Grilled buschetta chicken recipe

 

Prep time: 15 minutes

Serves 4

Serving size: 1 chicken breast 

 

Ingredients

4 chicken breasts

¼ cup plus 1 tbsp. balsamic vinegar

¼ cup olive oil

4 slices fresh mozzarella

4 Roma tomatoes, seeded and diced

½ cup fresh basil, sliced into ribbons

2 tsp. minced garlic  

Instructions:

Add ¼ cup vinegar and the olive oil to a 1-gallon resealable plastic bag. Mix well. Add chicken breasts and marinate for 30 minutes.

When ready to cook, heat grill to medium. Brush the grill with oil and add chicken breasts. Cook for about 5 minutes and then flip. Grill another 5-10 minutes or until fully cooked. During the last 2 minutes of grilling, put 1 slice of mozzarella on top of each chicken breast to melt.

Meanwhile, in a bowl combine the tomatoes, basil, garlic and 1 Tbsp. vinegar. Toss to combine.

Serve chicken topped with tomato mixture.
