Delicious Seafood Chowder in 6 Easy Steps

Ingredients

1 tbsp. butter or ghee
½ cup onion, finely chopped
1 large fennel bulb, cored and sliced
1 lb. red potatoes, diced
2 cups carrots, diagonally sliced
4 bottles clam juice
1 cup water
1 tsp. salt
¼ tsp. ground pepper
1/8 tsp. thyme
1 lb. cod fillet, cut into chucks
1 lb. shrimp, peeled and deveined
½ cup heavy whipping cream
¼ cup fresh parsley, chopped

Instructions

  1. In a large saucepan, melt butter or ghee over medium-low heat.
  2. Add onion and fennel, stirring occasionally until tender.
  3. Add potatoes, carrots, clam juice, water, salt, pepper, and thyme. Bring to a boil, reduce heat, cover, and then simmer until vegetables are tender.
  4. Add cod and shrimp to the saucepan. Cover and let simmer for about 5 minutes, or until the mixture is opaque.
  5. Gently stir in cream, but do not boil.
  6. Sprinkle each bowl with parsley.
