Easy Iced Gingerbread Oatmeal Cookies

Gingerbread is a holiday staple. Enjoy these easy-to-bake and healthy gingerbread oatmeal cookies.

Ingredients

1 cup instant oats

¾ cup whole wheat or gluten-free flour

1½ tsp. baking powder

1 tsp. ground ginger

¼ tsp. ground cinnamon

½ tsp. ground nutmeg

½ tsp. ground cloves

¼ tsp. salt

2 tbsp. coconut oil or unsalted butter, melted and cooled slightly

1 large egg

1 tsp. vanilla extract

¼ cup pure maple syrup

¼ cup molasses

For Icing

3 tbsp. confectioners’ style stevia

2 tsp. nonfat milk

Instructions

1. To prepare cookies, whisk together the oats, flour, baking powder, ginger, cinnamon, nutmeg, cloves, and salt in a medium-sized bowl.

2. In a separate bowl, whisk together the coconut oil, egg, and vanilla. Stir in maple syrup and molasses.

3. Combine the oats and flour mixture to the other bowl, stirring until well mixed.

4. Chill cookie dough for 30 minutes.

5. Preheat oven to 325°F, and line a baking sheet with a silicone baking mat or parchment paper.

6. Drop the cookie dough into 15 round scoops on the prepared sheet, then flatten to about half of the cookie dough’s original height.

7. Bake for 10 to 13 minutes then cool for 10 minutes.

8. While cookies bake, prepare the icing by stirring together the stevia and milk in a small bowl. Transfer mixture to a zip-topped bag.

9. Once cookies have cooled, drizzle the cookies with icing.
