Simple White Bean Salad
Whether a main or side dish, this easy-to-make salad will keep you full.

Serves: 4
Ingredients
2 cans white beans (cannellini), drained and rinsed
1 English cucumber, diced
10 oz. grape or cherry tomatoes, halved
4 green onions, chopped
1 cup fresh parsley, chopped
15 to 20 mint leaves, chopped
1 lemon, zested and juiced
Salt and pepper
1 tsp. Za’atar spice
½ tsp. Sumac spice
½ tsp. Aleppo spice
Extra virgin olive oil
Feta cheese, optional
Instructions
- Add together white beans, cucumbers, tomatoes, green onions, parsley, and mint in large mixing bowl.
- Add lemon zest, season with salt and pepper, and then add Za’atar, Sumac, and Aleppo spices.
- Finish with lemon juice and a generous drizzle of extra virgin olive oil (about 2 to 3 tablespoons).
- Toss the salad to combine all the ingredients.
- Add feta cheese, if you desire.
