Simple White Bean Salad

Whether a main or side dish, this easy-to-make salad will keep you full.

2 cans white beans (cannellini), drained and rinsed
1 English cucumber, diced
10 oz. grape or cherry tomatoes, halved
4 green onions, chopped
1 cup fresh parsley, chopped
15 to 20 mint leaves, chopped
1 lemon, zested and juiced
Salt and pepper
1 tsp. Za’atar spice
½ tsp. Sumac spice
½ tsp. Aleppo spice
Extra virgin olive oil
Feta cheese, optional


  1. Add together white beans, cucumbers, tomatoes, green onions, parsley, and mint in large mixing bowl.
  2. Add lemon zest, season with salt and pepper, and then add Za’atar, Sumac, and Aleppo spices.
  3. Finish with lemon juice and a generous drizzle of extra virgin olive oil (about 2 to 3 tablespoons).
  4. Toss the salad to combine all the ingredients.
  5. Add feta cheese, if you desire.
