Fresh Cranberry Salsa

This sweet and spicy salsa is unique take on cranberries—serve with cream cheese and crackers for a crowd-pleasing appetizer.

Total time: 1 hour and 5 minutes
Makes about 2 ½ cups

Ingredients


1 (12 oz.) bag fresh cranberries
½ cup fresh cilantro, chopped
½ cup green onions, roughly chopped
1 jalapeno pepper, seeded and chopped
Zest and juice of 1 lime
½ cup granulated sugar

 

Instructions

 

1. Place all ingredients into a large food processor and pulse until well mixed. Be careful not to overmix, you want a slightly chunky consistency.
2. Transfer the salsa to a bowl, cover and refrigerate 1 to 2 hours before serving (this helps the flavors to blend).
3. Serve with crackers or tortilla chips. Can be served over cream cheese, if desired.
