Easy Cauliflower Fried Rice

Ingredients

1 large head cauliflower
2 tbsp. vegetable oil
1 orange pepper, sliced into thin 1/2” pieces
1 scallion, thinly sliced
1 2” piece ginger, cut into thin matchsticks
2 tbsp. low-sodium soy sauce
2 tsp. chili garlic paste
2 tsp. honey
4 large eggs
1 cup frozen peas, thawed
1 cup frozen edamame, thawed
Lime wedges for serving

Instructions

  1. Cut cauliflower into florets, discarding the tough inner core and leaves.
  2. Transfer cauliflower to the bowl of a food processor, and pulse until the cauliflower resembles rice (about 15 seconds).
  3. Set aside.
  4. Heat 1 tbsp. oil in a large cast-iron skillet over medium-high heat.
  5. Add the pepper, white parts of the scallion, and ginger. Stir for 2 minutes.
  6. Add cauliflower to the mixture and toss to combine then cover and stir once for 5 minutes.
  7. Meanwhile, in a small bowl, whisk together soy sauce, chili garlic paste, and honey.
  8. In another small bowl, lightly beat the eggs.
  9. Push the cauliflower mixture to one side of the skillet and then add the remaining 1 tbsp. of oil and eggs. Scramble until cooked (about 2 minutes).
  10. Remove skillet from heat and fold in the eggs, sauce, peas, and edamame.
  11. Serve with thinly sliced scallion greens and lime wedges, if desired.
