No-Cook Lemon Garlic Chicken Salad Stuffed Peppers

Enjoy these stuffed peppers that are full of flavor and easy to make.

4 cups cooked and cubed chicken
½ cup mayonnaise
1 tsp. salt
1 tbsp. fresh chives, minced
1 tsp. garlic powder or 2 cloves roasted garlic, minced
Pepper to taste
½ tbsp. lemon juice
Zest of ½ a lemon
3 bell peppers


  1. In a large bowl, whisk together mayonnaise, garlic powder, salt, pepper, chives, lemon zest, and lemon juice.
  2. Add the chicken to the bowl, and toss everything until it is well coated in the dressing.
  3. When ready to serve, slice each bell pepper in half, lengthwise. Remove seeds and lay cut-side up on a plate.
  4. Fill each bell pepper with the chicken salad.
