No-Cook Lemon Garlic Chicken Salad Stuffed Peppers

Ingredients
4 cups cooked and cubed chicken
½ cup mayonnaise
1 tsp. salt
1 tbsp. fresh chives, minced
1 tsp. garlic powder or 2 cloves roasted garlic, minced
Pepper to taste
½ tbsp. lemon juice
Zest of ½ a lemon
3 bell peppers
Instructions
- In a large bowl, whisk together mayonnaise, garlic powder, salt, pepper, chives, lemon zest, and lemon juice.
- Add the chicken to the bowl, and toss everything until it is well coated in the dressing.
- When ready to serve, slice each bell pepper in half, lengthwise. Remove seeds and lay cut-side up on a plate.
- Fill each bell pepper with the chicken salad.
