Ground Turkey Sweet Potato Skillet (Gluten Free)

Ingredients
2 tbsp. extra virgin olive oil
1 lb. extra-lean ground turkey
1 tsp. garlic clove, minced
½ cup onions, diced
½ cup yellow pepper, diced
1½ cups sweet potato, diced
Salt and freshly ground pepper
Pinch of red chili flakes (optional)
½ cup shredded mozzarella cheese
Fresh parsley for garnishing (optional)
Instructions
1. Heat the olive oil over medium-high heat in a cast iron skillet.
2. Add the ground turkey and garlic, using a wooden spoon to break up the turkey. Stir occasionally and cook for about 5 minutes.
3. Add the onions and yellow peppers. Cook until onions are soft.
4. Add the sweet potatoes, red chili flakes (optional), salt, and pepper.
5. Cover the skillet and cook until sweet potatoes are soft. Stir occasionally. If necessary, add a bit more olive oil or water to cook the sweet potatoes faster.
6. Preheat oven to 400°F.
7. Add shredded cheese on top once the sweet potatoes are tender and place the skillet in the oven.
8. Remove from oven when the cheese melts and garnish with parsley.
