Peanut Butter Banana Baked Oatmeal

Serves: 6

Ingredients

2 cups old-fashioned oats

1 tsp. cinnamon

1 tsp. baking powder

¼ tsp. salt

2 overripe bananas

1½ cups almond milk

¼ cup creamy peanut butter

2 tbsp. maple syrup

1 tbsp. ground flaxseed

1 tsp. vanilla extract

Instructions

1. Preheat oven to 375°F.

2. Combine oats, cinnamon, baking powder, and salt in 8x11 inch baking dish.

3. In a large mixing bowl, mash bananas, then add almond milk, peanut butter, maple syrup, flaxseed, and vanilla extract. Allow mixture to stand for 5 minutes for the flaxseed to set.

4. Pour mixture over the oat mixture and stir to combine.

5. Bake uncovered until top of the oatmeal is golden and mixture is set, about 30 to 35 minutes.

6. Remove and cool for 5 minutes.

7. Serve with drizzled peanut butter and banana slices.
