Pumpkin Oat Cookies
Indulge in a few pumpkin oat cookies that are a perfect treat for the fall season.

Serves: 12 cookies
Ingredients
2 ½ cups rolled or quick oats
1 cup pure pumpkin puree
2 to 3 tbsp. maple syrup, agave, or coconut sugar
1 tsp. pumpkin pie spice or cinnamon, optional but recommended
½ cup dairy-free chocolate chips, optional but recommended
Preparation
1. Preheat oven to 350 degrees.
Instructions
1. Mix all ingredients together to form a thick dough. Add 2 tablespoons of maple syrup, agave, or coconut sugar and slowly add more for desired sweetness.
2. Once thoroughly mixed, create 12 cookie shapes using your hands. The cookies will not spread or change shape during cooking, so make sure to have the right shape before baking.
3. Place parchment paper on a baking pan or place cookies directly on the pan.
4. Bake for 10 minutes.
