Pineapple Coconut Mock Mojito Smoothie

Made with avocado and coconut milk, this recipe for a creamy coconut mojito smoothie is perfect to make on a hot summer night.

Pineapple Coconut Mock Mojito Smoothie


Prep time: 10 minutes

Yields 3 servings  


½ ripe avocado

12 oz. coconut milk

½ cup coconut yogurt

2 tbsp. lime juice (or to taste)

1 tsp. vanilla extract

1 tbsp. maple syrup

½ cup fresh or frozen pineapple


Mint leaves – optional  


1. In a blender, combine all ingredients plus 4-6 mint leaves (if using).

2. Add ice and blend well.

3. Garnish with mint sprig (optional). Serve cold.
